Abstract: The sociospatial anchoring of agricultural and food production systems occurs in various configurations at different scales of governance. Their actors may rely on the institutional apparatus of geographical indications with help from more or less complete internal forms of coordination or forms that are often external to the systems considered. This results in valuations of products that are expected by consumers, but with effects that vary throughout different regions.
