Abstract:
Based on a corpus of surveys conducted in France and Italy, this paper proposes an analysis of the trajectories of six different food collectives that turn away from geographical indications without being reduced to short supply chains. The qualification devices that are being set up prompt us to introduce the concept of territorial agri-food system to encompass their originality and to discuss their conditions of emergence and viability.
