Abstract: Time is an essential component in the development of economic activities. However, such a temporal account is concomitantly configured by production patterns, social environments and ideologies, configurations that could be collected in the concept of economic rationality. Due to the reflexive nature of this notion and its incoherencies, investigate it during Antiquity is a challenge, even more for an archaeologist. To conduct such a study, we would like to use the contexts of the ancient Cadiz in relation with salted fish production. The Phoenician colony of Gadir was a major economic center, which gained even more influence during the Roman period. Thus, we should consider the physical evidences in regards with this activity for this city, during the Phoenician and Roman eras, as the representation of specific economic rationalities, and then try to analyze their characteristics.
