Abstract:
This paper addresses on new technologies for dealcoholisation of wines. It deals with competition for adoption by the firms, of new generic technologies inside the industry as well as the classical substitution between the new and the old one. The study is based not only on the technical stapes inside different types of plants but also takes into account the possible sharing of the technical chain between several firms for historical or juridical reasons. The assessment methodology is based on the cost analysis, got by survey or estimated by their components and their parameters in a standard way. Results focus on a large dispersion of the global cost making some scenarios more interesting. Amortising and manpower are the most important components. But the global cost is sensible to initial hypothesis on implementation of the technologies and particularly the volume of wine processed. We also have to consider the analytical and organoleptic qualities of the final products and the firms' general strategies.
