Abstract:
The objective of this article is to analyze a case of entrepreneurial teaching through the setting up, by the teacher himself, of a company in the anti-food waste industry. The first aim of this case study is to report on two types of interaction: the change in the strategic choices of the entrepreneur-teacher in relation to the educational results obtained in situ; and the change in the educational practices of the teacher-entrepreneur when dealing with a real case. This study then questions the "classic" entrepreneurial skills developed by the students and, more specifically, those related to eco-responsible entrepreneurship through their awareness of food waste issues.
