The French Food Sector Price and margin Surveillance Program: Economic Studies and Interprofessional Dialogue in French Food Chain

Abstract: The article presents the methods and results of the French program of analysis of prices and margins in food chains, "the observatory of the formation of prices and margins of food products (OFPM)". The first type of analysis is microeconomic and accounting based, and is aimed at estimating the costs and benefits that make up the retail prices of different food products at different stages in the chain, including retail by supermarkets for which an original method of analytical accounting for the costs in the fresh food departments has been designed by the OFPM. The second type of analysis is a Leontief-macroeconomics type analysis, it leads to the decomposition of the national food expenditure, - the French "food euro" - , into induced values added, imports and taxes in the different industries of the national economy.
