Abstract:
The observatory of the formation of prices and margins of food products develops three types of analysis: - the décomposition of the retail prices of several food products into incorporated agricultural value and values added to this agricultural value by food processing industry and then by trade; - analysis, on the basis of company accounts, of the costs and benefits constituting the aforementioned values; - the distribution of food expenditure in added values induced in the branches, imports and taxes
