Abstract:
Apprenticeship training in the hotel and catering industry has a long history. But hotel schools have only existed since 1910. In France, apprenticeship has had its ups and downs throughout history. It has always been valued by professionals, but much less so, at certain times, by the public authorities. This paper aims to retrace the history of apprenticeship for hotel and restaurant employees and to study the history of hotel and catering school in parallel.
