Abstract: This article argues that the choice to set up a short food chain has an institutional impact, insofar as this practice is accompanied by a change in the institutional environment of the agricultural entrepreneurs concerned. This environment is defined, referring to neo-institutional theory and resource dependency theory, into socio-economic pressures, regulatory pressures, and those related to beliefs and nature.
