Abstract: Food Distinctions. How Do Our Tastes Reveal Social Divides?Can our food preferences be reconciled with the various rules and prescriptions that govern our consumption? How do these norms circulate within the social space? This book delves into the heart of food tastes and the norms that shape them. Through a rigorous sociological analysis based on fifteen years of research conducted at INRAE, it examines the dietary norms across social classes. From the constraints self-imposed by elites to the claimed freedom of the working classes—while also considering the fears and aspirations of the middle classes—food emerges as a field of both distinction and resistance to dominant norms. By exploring food-related issues, this work sheds light on the dynamics of polarization and fragmentation that characterize French society. It raises crucial questions about inequality, health, and ecology, while highlighting the central role of taste in our relationship to food.
