Abstract: For more than twenty years, local food supply chains (CCAPs) have brought together a group of stakeholders that extends beyond the producer-customer relationship. As well as producers marketing their products through traditional sales channels such as markets, fairs and farm sales, new economic players have emerged, alongside growing interest in public policy around this issue. CCAPs have continued to develop as an alternative project for certain consumers (AMAPs), and various means of grouping sales for producers have emerged, such as producers' shops and cooperatives. This has resulted in greater diversity in terms of sales methods. The common label of 'CCAP' thus takes on a multifaceted character, particularly in terms of logistical organisation. This thesis aims to identify and analyse the diversity of relationships and their role in organising the CCAP supply chain.
