Abstract:
Mad cow disease, dioxin, hormone residue and antibiotics in meat...highlight the inadequacy of food safety controls in terms of production, meat processing and distribution. Faced with this growing apprehension, consumers are demanding more and more transparency in order to become aware of the risks, furthermore governments are implementing food safety standards to reduce the risks linked to food consumption. The concern for public health safety protection justifies certain restrictions which often exceed the obligation to insure public health protection. In essence, these measures seek to protect the national producers against their foreign competitors and increase the liberalization of commercial trade through the dismantling of other trade protection mechanisms such as customs.
