Abstract:
This research studies the perception and the reduction offood rtsk. Using the transactional theory of stress and coping, and by means of structural equation modeling, it is demonstrated that, facing food perceived risk, consumer may try to resolve the problem he is facing (problem focused coping strategies), may attempt to limit the emotional impact related to risk perception (emotionfocused coping strategies), may use both ways of coping by using culinary appropriation techniques.
