Abstract: This article analyzes different kinds of coordination and cooperation between operators in a food chain and their effect on the control of sanitary and phytosanitary risk in the markets. The originality of this paper is to identify through theoretical modeling, conditions, particularly in terms of the reliability of official controls and the bargaining power in the supply chain, for which certain forms of cooperation emerge and contribute to reducing health risk and insure an equitable sharing of the value in the supply chain. We show that contrary to intuition, a process of vertical integration is not always the one that provides the largest decrease the health risk.
