Abstract:
In 2005, €100 of food expenditure in retail stores (excluding restauration outside or at home delivery ) generated € 65 of value-added distributed as follows in the various industries of the French economy: - €8.30 in agriculture; - €11.30 in food processing industry; - €4 in other industries; - €20.40 in wholesale and retail trade; - €18.5 in services; - €2.40 in transport; The rest of the €100 paid for imports of final food products (€13) and inputs (€12) and consisted of product taxes (€9.8). The €65 value added induced in the industries by food expenditure is divided between salaries for €35 and gross operating surplus for €30. About 1.9 million jobs were induced by food consumption. 39% of the value added produced in agriculture in the same year came from the food final consumption (excluding restauration, take away food and food delivery at home), for 26% of subsidies, the rest (12%) of the value added of agriculture resulting from the demand for the other products. These results, which quantify the distribution of added value in the food chain, are obtained by calculation on the input-output (ES) tables in the national accounts, they will be calculable over other years.
