Consumer Meat Safety Concerns: Impacts of Beef E. coli O157: H7 Recalls on Meat Consumption

Abstract: This study uses national, quarterly data to investigate U.S. meat demand using both the Rotterdam model and LA/AIDS model. We examine the effect of FSIS recalls especially beef E. coli O157: H7 recalls information on the consumption of meat. The estimated results indicate that beef E. coli O157: H7 recalls information has negative and significant impacts on the demand of beef, pork, and poultry. We also compare the results of the two demand models and discuss the model selection.
