Abstract:
The Jean-Daniel Reynaud's theory of social regulation is applied to the market as a meeting-place for working out regulations. The fieldwork on the supplying of organic and local produce to catering businesses serving public institutions in France, shows that organizing this supply chain involves many activities of regulation. The organization of market require initiaties, innovations and a real organizational work.
