Abstract: A mini-bakery is an enterprise that manufactures bakery products and provides the population with pastries and fresh bread according to unique recipes. And it also creates a homely and warm atmosphere. This article provides a strategic analysis of the industry to identify the relevance of opening a mini-bakery in the Perm Region. The authors analyze the current state of the markets of this type of product at the global, federal, regional and local levels. The strengths and weaknesses existing in this industry have been identified, as well as factors affecting the company’s activities that the company cannot influence.
