Abstract: Dietary consumption of whole grains has been linked to reducing the risks of developing chronic diseases including diabetes, obesity, cardiovascular disease, and some cancers. One of the bioactive compounds of whole grains, β-glucan, has been proposed to be responsible for their health benefits. β-glucan is a non-digestible and non-starch polysaccharide, widely distributed in grains, bacteria, yeast, and fungi. This article will review current research about β-glucans originated from different sources and their health benefits, especially on innate immune modulation, metabolic syndrome, and gut health, and focus on mechanisms of action of soluble and insoluble β-glucans on their biological functions.
