Abstract: There is no clear definition of organic farming in the literature, but this concept is based on sever production rules and principles, regulated by the legislation in the area. The organic production requires to build a sustainable, balanced and diversified system, aiming at protecting the environment and the supply of agro-food products with certain nutritional and sanitary quality. In the present age, the knowledge about vital processes from plants and the mechanisms that control them have evolved enormously. This study shows the impact of human activity on organic food production and the evolution of organic farming in Romania and Poland.
