Food Demand Analysis: A New Approach

Abstract: In this paper a method to examine how households make their food choice considering micronutrients through utility theory is applied. The findings support the argument that nutrients play an important roles in the demand for food. The method is illustrated using the raw data EIH 2000/2001 (Enquesta Integrata de Hogares) for a set of different food groups.
