‘Eat More Chikin’ - Structural Change Via Threshold Effects: The Effects of Female Labor on U.S. Meat Demand

Abstract: Structural change has been a focus in the food demand literature. Studies have analyzed structural change using a variety of different approaches and methodologies. The objective of this paper is to analyze the effects of time and changes in the female labor force in the United States on U.S. meat demand. Past research has identified changes over time and in the female labor force as having distinct effects on meat consumption in the U.S. This study finds that structural change has occurred in meat demand in the U.S. over time and due to changes in the female labor participation rate.
