Incorporating Food Attributes in the Demand for Food: A Cross-Section Study of Oyster Consumption

Chung-Tung Jordan Lin and J. Walter Milon

No 271271, 1991 Annual Meeting, August 4-7, Manhattan, Kansas from American Agricultural Economics Association (New Name 2008: Agricultural and Applied Economics Association)

Abstract: This study examines the relationship between consumer's product attribute perceptions, especially food safety perceptions, and long-term consumption of oysters. Statistical analysis of consumer survey data shows that attribute perceptions are significantly associated with both market participation and level of consumption decisions. Yet, safety perception had a negligible behavioral impact.
