Abstract:
The ordinary egg is produced by an industrial-type system, the characteristics of which lead both to an atomiza- tion and to a concentration of its production. In this production-line (laying-production-processing) new firms and structures are set up, based on non-agricultural capital. The problems of restructurization, management and organization of these firms are studied and analysed.
