Le déséquilibre offre-demande sur le marché des produits laitiers

Abstract:
The search for a solution to the overproduction crisis in the dairy products market is, with the decreasing effects on the common market's agricultural policy and on its cost of the monetary problems, one of the main issues facing those responsible for « green » Europe. This article shows that surpluses cannot all be attributed to the behaviour of farmers anxious to improve their income by increasing their output. It seems that the irregular nature of demand by the processing industries, and the lack of flexibility in the production processes, naturally lead to surpluses if the demand is to be met, as this overproduction could be increased or decreased by the existing production and processing structures.
