Abstract: The analysis of the creation of agricultural revenues must take into account the strategies of the farmers. Two current kinds of strategic action are put forward when describing the forms of institutionalised competition that have shaped the contemporary French food and agricultural system. They aim at responding to the exhaustion of the principles of selection that have accompanied the growth of the past thirty years, and to reconstitute new principles which would allow forms to maintain the competitive advantages resulting from the characteristics of the past development.
