Abstract:
Competition implicated the beaufort production model. For coping with deep identity's crisis at the end of fifty years, Beaufort cheese producers get organized and constructed the quality of their product. This paper shows, how this local cheese of quality, of which the notoriety is today acknowledged, has been constructing.
