Abstract: Standardisation is a condition of the globalization. It allowed the creation of the ches ter of industries whid produce broilers. In this chestr, some activités are worldwide, whereas others may be organized only at a local or regional level. The diversification de la demande is one the globaliszation limitation, lies in institutional forms put on national industrial structures. Local and régional context has to stimulate copétition and innovation activities of companies, specially through investments in R and D.
