Abstract: Food traditions in India are very rigid, since they are part of the religions rites of the different communities. Food and cooking traditions are closely linked to health and to the main events of family life. Yet a slow change does take place in food behaviour patterns. The urban middle class way of life introduces a rationalisation of cooking habits ; the Green Revolution obliges some food traditions to change in several regions. But the main obstacle to a diversification of the Indian diet is poverty.
