Abstract:
Financial concentration and internationalisation of food industry are the main facts of the eighties. Rationalisation of the working force is another caracteristic of the decade. During this period, financial and economical factors take the lead in the concentration process, overweighting technical factors. On an other hand, the end of the seventies shows a turning point in employment's evolution which had been stable during the thirty pressions years. But these trends in different sectors and countries vary accross countries, according to national specificities and the state of demand satiation.
