Abstract:
The authors question the links between culture and preferences for food. Through an experimental blind test on milk with German and french consumers, they show that respondents show significantly a preference for local milks. The authors conclude that practitioners should pay attention to local taste variations in their international product policies. The research suggests a validation of nationality as a variable which may enter as a synthetic and explicative factor of sensory preference for food.
