Systemy Zarządzania Bezpieczeństwem i Jakością Zywności w Przemyśle Spożywczym w Polsce

Abstract: The aim of the article was to present the state of implementation of obligatory and non-obligatory food health safety and food quality management systems in the food industry in Poland. The study included all companies (by groups and classes of PKD) operating in Poland, and subject to oversight by the State Sanitary Inspection and Veterinary Inspection. In the food production it is obligatory to implement and maintain GHP, GMP and HACCP. Starting from the Polish accession to the European Union has been a significant increase in the number of companies that have implemented and maintain obligatory quality management systems. The study, however, shows that in 2012 the obligatory HACCP system was implemented and maintained only by 63% of companies processing non-animal products and only by 50% of companies processing animal by-products. Non-obligatory quality management systems were implemented by less than 5% of the total number of food industry companies.
