Abstract: The purpose was to evaluate the impact of the factors that determine the demand of carcass beef cattle in the Center West region of Mexico from 1997 to 2017. An exponential multiple logarithm multiple regression model was used. The dependent variable was the demand of beef cattle and the return of the real price for consumer of beef cattle, real price for consumer of meat pork and real income per capita. In the center west region of Mexico, the demand responded inverse and inelastically to the price of the product (0.37), direct and inelastic to the price of pork meat (0.16), direct and inelastic to the income (0.39). In conclusion, consumer income and beef cattle price generated a greater response in the regional behavior of the demand for that meat.
