Abstract:
Recently, the consumption of ginger in Mexico has been revalued, derived from its multiple benefits for human health. Although there has increased interest in the production and consumption of ginger, it is still not as important compared to other vegetables, due to the extensive ignorance among society about the benefits of this food, in addition to the low added value it presents in its commercialization, and to the limited development of international markets for export, so that practically most of the production remains in the domestic market for fresh consumption. Likewise, the ginger agri-food chain has not yet developed in diversification of products, causing producers to have the need to face problems of low prices in commercialization, due to the low added value, and due to the lack of recognition as solidarity product or with organic certification. The present work exposes a proposal of various options aimed at increasing the added value of ginger, as well as the design of a sustainable agri-food chain model that facilitates the organization, distribution, and commercialization of products with greater value, made of this functional food.
