Abstract: Excerpt from the report Summary: Detailed descriptions were developed and labor requirements were determined by methods-time-measurement (MTM) analyses for each processing step in the turkey-evisceration operation in commercial turkey-processing plants. The time values developed provide precise information on labor requirements for each successive step in the eviscerating operation and form a base from which management can design the most efficient eviscerating-crew composition.
