Abstract:
This report presents data on the marketing of cottage cheese and frozen dairy products by 35 milk processing plants in Kansas, Missouri, and Oklahoma. The purpose of this study, as in the related reports, is to provide criteria for an improved basis for pricing surplus graded milk. This milk has, historically, been priced in these markets at the same level as ungraded milk on the assumption that it is used for the same products. This study considers two of the uses for surplus graded milk -- cottage cheese and frozen dairy products. Specifically, the study considers the importance of these products according to the quantity of surplus graded milk used by the plants and as sources of income to the plants.
