Abstract:
Excerpt from the report: This report will show the relation of unsanitary procedures, especially during hydrocooling, to market decays of peaches and show how such contamination can be avoided. Information is also given on peach temperatures during heating and cooling and on the commercial application of heat treatment to peaches.
