Amber Waves:The Economics of Food, Farming, Natural Resources, and Rural America, 2020, vol. March 2020, issue 02

Abstract: ERS researchers scored the nutritional quality of a week’s worth of food purchases and acquisitions by low-income food-secure and food-insecure households. For every 1,000 calories of food at home acquired, food-secure households acquired more total fruit, whole fruit, total protein, and seafood and plant proteins compared with food-insecure households.
