U.S. Milling and Baking Industries

Abstract: U.S. per capita flour consumption reached 128 pounds in 1987, the highest mark since the early 1950's and 4 pounds over the 1986 level. This strong demand has been accompanied in the mining and baking industries by larger output per plant, improved production and distribution efficiency, and rising concentration (a relatively large share of capacity held by relatively fewer firms). Concentration among the top four wheat flour and durum milling firms alone increased from 34 percent in 1973 to 52 percent in 1987. This report, which describes the industries' structure, conduct, and performance, examines such current trends.
