Alternative Menus for Schools

Abstract: Meals served by the National School Lunch Program (NSLP) represent a significant percentage of all meals consumed away from home. Approximately half of all students in elementary and secondary schools receive a lunch at school through the NSLP, amounting to about 4.2 billion meals per year.
