Excerpt from the report Summary: Covered in the five sections of this report are: (1) Description of historical trends in meat consumption and related economic changes; (2) variations in household meat consumption by region, urbanization, and income as revealed by special surveys; (3) analysis of the regional structure of the U.S. market for meat based on household survey data; {4) some information on meat consumption outside private homes; (5) implications for future changes in meat consumption. Tables and appendixes provide data and technical information for further analysis.
