Abstract: The text proposes a re-examination of the nature of Urban Food Systems. The latter have progressively imposed themselves as a grid for the analysis of the modes of urban food supply in a framework of globalization and urban growth. The text develops two complementary approaches to these systems through flows and actors. It concludes that these systems are above all hybrids of the world of productivity and the world of specificity. They contain a base of common characteristics intertwining the two worlds and a part of specificity particular to each place and territory.
