Abstract:
?There are two dimensions that have held an important place in the literature on food product commercialisation for more than twenty years ? the performance of the supply chain, and standardisation of product traceability. In the wine supply chain (WSC), these issues are particularly important due to the special nature of the industrial and logistical process and the gourmet type of consumer. However, no comprehensive measure of performance has so far been proposed. The objective of this paper is to propose a detailed methodology and concrete performance measures related to standardisation of WSC traceability, relying on social network analysis. This should allow every member of the supply chain to have a holistic vision that increases the visibility of the total flow of products and information.?
