Abstract: Origin labelling aims to protect a product by its specification in relation to its geographical origin. In return, it excludes producers on the basis of localization and technical criteria. The purpose of this article is to analyze the strategies of actors to establish the Protected Geographical Indication « Canard à Foie Gras du Sud-Ouest ». The study of the quality designation devices and of the mechanisms of market building give food to the problem of the origin promotion linked to exclusion. An insufficient promotion conduces to the emergence of strategies which question the exclusion criteria that have been first defined. This requires wondering about the processes of interactions between producers and consumers.
