Organiser le marché: une lecture par la théorie de la régulation sociale

Abstract: Jean-Daniel Reynaud?s theory of social regulation is applied to the market as a meeting-place for working out regulations. The fieldwork on the supplying of organic and local products to catering businesses serving public institutions in France shows that organizing this supply chain involves many activities of regulation. The organization of market requires initiatives, innovations and a real organizational work.
