Que guide un guide ?. Évaluation et attention des producteurs aux notes sur les marchés des bonbons de chocolat

Abstract:
Since 1988, a specialized guide (Guide des croqueurs de chocolat) has rated producers of chocolate confectionery in France according to consistent quality standards. In doing so, it presents a market based upon these standards. While producers do pay attention to the guide?s ratings, this is primarily so that they can criticize the procedures upon which these are founded, ignore them following a low rating, or try to control their circulation and their significance within what they describe as spatially confined markets.
