Embaucher ou habiliter ?. Recrutement et espaces de (non-)qualification dans l’hôtellerie-restauration

Abstract:
?How to build trust while hiring candidates without any qualification? We show that recruitment deals with unequal screening processes within two contrasting areas differentiated according to their qualification structure. For this, we use several investigations in the hotel-restaurant field in order to analyse recruitment practices. In the ?professional sector?, trust is built before hiring transactions. Because recruitment is based on the recognition of qualities assessed within professional networks, it reaches its limits facing unknown and unqualified candidates for unskilled jobs ? to the point where it may be outsourced. On the contrary, the ?commercial sector?, in which the workforce is supposed to be more easily substituted, is more dependent on labour market intermediaries. The screening processes can lead to the recruitment of candidates with improbable profiles so that the idea of a hotel-restaurant industry mainly known, in France, for its discriminatory practices, has to be qualified.?
