Abstract:
Modernism is a concept that is gaining ground in the 21st century in all sectors of life. Everyone wants to do better and, above all, be like everyone else. The food and/or nutrition sector is no exception. It has thus become normal and logical to eat in restaurants for well-justified reasons. We see individuals of all ages, both male and female, frequenting restaurants where it is believed to be quick and less expensive. For the DRC, the dualism resulting from acculturation is observed at different levels and is evident for everyone. Diving into entrepreneurship, some people have found that restaurants are a promising sector in which to invest. This is the basis for the creation of restaurants here and there. It is true that any establishment where cooked, ready to-eat meals are sold is called a restaurant. In several cities in the DRC, this term is misused, misused, because a restaurant is an establishment with well-respected standards. In Congo, they are called "MALEWA". They are visible as far away as the capital, Kinshasa. Our study focuses on the impact of these small restaurants on the health of those who frequent them, given the precarious hygiene conditions in these establishments. Waterborne diseases are a constant occurrence in our communities: typhoid fever, worm infections, diarrhea, and others. This excites our curiosity as development science researchers. This study is a warning to a community whose ignorance is the root of several ills.
