Abstract: The use of fruits and their derivatives in a population represents a daily practice that helps to solve problems not only of a nutritional nature but also of health. The present study has as its application the evaluation of the normoglycemic effect of extracts (aqueous and hydroalcoholic) of Sechium edule (Jacq.) SW. (chayote) in biomodels. ”To obtain the aqueous extracts, the fresh fruits were cleaned, the seeds removed, liquefied and filtered; for the 50:50 hydroalcoholic extract; it was added to the smoothie and macerated for 48 hours. Quality control parameters were determined (ashes, moisture, fats, polysaccharides, quantification of quercetin). For the determination of normoglycemic activity, verify nine groups of five animals each: (A normal; B diabetic, C Metformin, aqueous and hydroalcoholic extract 150, 75.37.5mg / kg). Prior to anesthesia baseline glucose values were determined, the administration of the treatments was oral / six days. On the second day after administration they were given aloxane; On the sixth day before fasting, the final glucose was determined. With the analyzes made to the fresh fruit, the main physical and chemical characteristics were obtained where the quality of the product under study could be determined (Sechium edule). According to the normoglycemic activity analysis it was found that Sechium edule (chayote) has a measured effect. The results indicated that the aqueous extract with a dose of 150 mg / kg showed a decrease in glucose values (129 mg / dl).
