Abstract: Despite the cost of chronic diseases and the possibility of a prevention by a better nutritional balance, few research has studied nutritional compliance. The aim of this research is to understand the reasons of the nutritional non-compliance of patients with chronic diseases, in order to identify actions which could be applied to prevent complications. A qualitative study was conducted: 28 chronic patients were interviewed. The content analyses with Alceste enabled to obtain 4 classes: the first one explains the "nutritional constraints" which result of the diseases, the second one represents the way the non-compliance is managed and the contradictions that respondents have to face, because of the hedonic characteristic of food, the two last classes are linked and related to the reasons of the disease and the medical care.
